H2O-C12H22O11 equilibrium phase diagram. Phases at equilibrium for the system H2O-C12H22O11 are shown as a function of chemical composition (weight percent sucrose) and temperature. The blue area indicates temperatures and compositions for which a single liquid phase (sugar water) is present at equilibrium. Boundaries to the blue region are saturation curves for ice or sucrose. The maximum amount of sugar that can be dissolved in hot water is higher than the maximum amount of sugar that can be dissolved in cold water.
