H2O-C12H22O11 equilibrium phase diagram with steam. Phases at equilibrium for the system H2O-C12H22O11 are shown as a function of chemical composition (weight percent sucrose) and temperature. The blue area indicates temperatures and compositions for which a single liquid phase (sugar water) is present at equilibrium. Pure water boils at 100°C. Sugar water boils at higher temperatures for higher weight percentages of sucrose. On this diagram, a steam saturation curve is present along with a sucrose-saturation curve and an ice-saturation curve. Where two saturation curves meet, a special point exists that gives the composition and temperature of syrups that are simultaneously saturated with two phases. These points are named the eutectic point (ice + sucrose saturation) and the chaotectic point (steam + sucrose saturation). Data sources for this diagram can be found in Brady (2009).
