The eclectic dishes that comprise Italian cuisine are perhaps the most imitated around the world. And of course imitation is the highest form of compliment; Italian food is famous for its light but savory herbs, its compelling aromas and the accompanying notion of 'family' so closely tied to the Italian culinary tradition. The foods of Italy are so varied, they have something to offer for even the most discriminating critic. The country's culturally diverse history has led to the development of an equally diverse menu, and that menu becomes increasingly variable from region to region. Italian cuisine is dependent upon fresh produce and therefore the season has a notable impact on the foods available. The foods that are most associated with Italy are pizza, lasagna, cheese, pasta, breads, beans, meat, olive oil and wine, but needless to say our impression of what constitutes 'Italian' food is highly influenced by our knowledge of local reproductions. There are some elements of the Italian diet which have not become so commercialized until just recently, such as their authentic prosciutto and decadent gelato. As these foods make their way onto the international menu, the world benefits from their unique and luscious new flavors.
